“The Best Ever – Blue Ribbon Winning – Chocolate Layer Cake – In All The Land”!

Being a Child of the 60’s, not as in Woodstock, but more like Sally Draper but with non-smoking, non-drinking, loving, supportive parents that actually liked their kids, these were my earliest baking recollections with my mom: Dream Whip. Dolloped on top of a boxed gingerbread cake.  My feet tucked under my knees on the kitchen chair watching her transform dense, brown holiday loaves filled with yellow and green cubed sticky stuff into baked jewelry.  The candied cherry halves on top… [Read More]

Seattle (Macaron) Space Needle Cupcake Topper

This past weekend my family had two occasions to celebrate so I decided the requested chocolate cake would incorporate both upcoming events – a Valentine’s Day birthday of my brother and the departure of my nephew, his wife, and baby-to-be who leave this week to make Seattle their new home. When I thought of Seattle, it was obvious to me what I had to make – the space needle!   I made a batch of lemon macarons without color tinting… [Read More]

The Best-Ever Chocolate Malts

What’s your favorite childhood summertime memory? Mine was of nights spent on our street playing kickball, roller skating, playing handball against the side of the house and riding our bikes. We’d sing “Leader of The Pack” as we imagined our bikes turning into motorcycles- “Vroom, vroom, vroom!” One by one we’d hear our respective moms calling our names from the front porch and we knew it was time to come in.   Since I’ve finished all my decorated Easter cookies I thought I’d turn to molded chocolate today. Candy coating, as it’s technically referred to, comes in all different colors and flavors but let’s call it chocolate.I melted the wafers in a small Pyrex dish on high for 1 minute in the microwave. Stir to melt all pieces. Heating to remelt the mixture after it cools, took 10 seconds. Tip: If you’re making a lot of molded pieces I recommend placing… [Read More]

O’reo Patties For St. Patty’s Day

chocolate covered molded oreo st patricks day

Chocolate covered O’reo patties for St. Patty’s Day ~O’Yum! These were made in a mold just for this purpose. No dripping messes. How genius is that? I knew I had to get this mold when I saw the shamrock pattern already in place. Here’s what you do: Buy a bag of Double Stuff Oreos. If you buy the cookies a few days before making these, make sure you save enough to actually make your project. Don’t ask me how I… [Read More]

Cocktail(s) of The Month – February

A classic way to begin the evening is with champagne perhaps with a blush of Pom liqueur or Cassis with two raspberries swimming in the bottom of the glass or try something different. A Valentine Aperitif ~ A Touch of Venus Refreshing, light, would also look nice with a strawberry on the rim. Ingredients: 3 oz. dry white wine 1 oz. Limoncello (sweet lemon liqueur, I keep it in the freezer-yum!) 1/2 tsp. amaretto 1/2 tsp. fresh lemon juice Lemon… [Read More]
